Ayurvedic Almond Pomegranate Kachumber
This refreshing, sattvic kachumber combines the nourishing depth of soaked almonds with the
rejuvenating brightness of pomegranate. Light, cooling and vibrant, it delivers a perfect balance
of grounding and cleansing elements while remaining gentle on the digestive system.

This recipe is good for two servings.
INGREDIENTS
75 gm Almonds, soaked and peeled
70 gm Cucumber, finely diced
80 gm Pomegranate arils
15 gm Fresh grated coconut
5 gm Mint leaves, chopped
5 gm Coriander leaves, chopped
15 ml Lime Juice
7 gm Honey or agave (optional)
Pinch of rock salt
Pinch of roasted cumin powder
Pinch of black pepper
2-3 drops of fresh ginger juice
5 gm Chia Seeds, soaked (optional)
METHOD
Soak the almonds in warm water for 30 minutes, then peel them to enhance digestibility and
lightness. Combine the peeled almonds with cucumber, pomegranate and grated coconut in a
bowl. Add the chopped mint, coriander, and chia seeds (if you are using them).
Whisk together lime juice, honey, ginger juice, cumin powder, pepper and rock salt. Drizzle the
dressing over the salad and toss gently to keep the textures crisp and fresh. Serve immediately
to enjoy its highest natural vitality.
