This is the easiest Russian Honey Cake ever. If you've ever been curious about this notoriously painstaking cake, but weren't willing to commit the effort before, try this shortcut recipe! Instead of baking the cake layer by layer, I'm just going to bake one giant sheet. This will still comfortably yield ~6 servings, as this is a very dense cake. The toasted honey has a very unique taste, that is definitely worth trying at least once!

Ingredients:
cake layer:
1/2 stick butter (~60g)
1/3 cup sugar (~70g)
1/4 cup honey (~80g)
2 eggs, cold & beaten
1tsp baking soda (~5g)
2 cups flour, loosely packed (~250g)
frosting:
1/3 cup sour cream (~80g)
1 cup heavy cream (~240g)
1/4 cup sugar (~50g)
Bake cake layer at 375F for 7min.
Whip frosting to stiff peak.
Assemble, and enjoy!
