Vanlife cooking: Making roadside prickly pear jam in Italy 🇮🇹

The intrusive thoughts won today. “Can I eat this?” quickly turned into 3 jars of prickly pear jam 😂😂.
All I used was a knife, board, bin bag at the ready (because it’s messy!) and using my hands, mashed everything into one pan.
For the jam itself you need 4 ingredients:
🤍 15 (20) spoons of sugar
🤍 3 Mississippi second squeezes on a bottle of lemon juice
🤍 a tablespoon (that’s the big one) and a half of salt
🤍 your prickly pears. I had 30.
The worst bit is the prickles. I had a plastic glove from the petrol station over my leather gloves and actually, putting the pears into my mesh foraging bag, giving it a little shake, most the prickles came off naturally. You can put them in a colander, rinse with water, and shake for the rest and they’ll come clean off.
The jam is delicious! Give it a try.
