Baker’s Note: You may add pecans or sprinkles to the donuts for a little extra special.
Donuts
2 packages active dry yeast
1 tsp white sugar
1/4 cup warm water (110 Degrees)
1/2 cup white sugar
1 tsp salt
1 1/2 cups lukewarm evaporated milk
2 jumbo eggs, room temperature
1 tsp vanilla extract
1 tsp red velvet flavor, optional
1/3 cup butter flavor shortening
1 tbsp unsweetened cocoa powder
1 tbsp liquid red food coloring
5 cups all purpose flour
Oil, for frying
Cooking Spray or oil, for greasing the bowl
Cream Cheese Glaze
2 tbsp cream cheese spread, softened
2 tbsp whole milk
1/2 tsp vanilla extract
1/2 tsp cream cheese flavor
2 cups powdered sugar, sifted
In a measuring cup, add water, 1 tsp sugar, and dry yeast; stir and sit until it rises and puffy.
In a medium bowl, add cocoa powder and red food coloring; stir until well combined and turns into a paste. Set aside.
In a stand mixer with paddle attachment or large bowl with hand mixer , add sugar, salt, yeast mixture, and evaporated milk; stir until well incorporated. Next add eggs one at a time then add vanilla and red velvet flavor (scraping occasionally). Then add butter shortening and 2 cups of the flour, stir until well combined. Stir in cocoa powder/food coloring mixture. Switch from paddle attachment to dough hook (if using stand mixer), slowly add rest of the flour using 1/2 cup at a time, knead until it soft (dough pulls away from sides of the bowl). Pour dough into a greased bowl; put in a warm place, cover and proof for 1 1/2 hours or until doubled in size. After that, punch dough in the center to release air the set it on a floured surface. Knead dough a few times then using a rolling pin, roll to 1/4 inch thick. Cut donuts using a biscuit cutter or glass, and bottom of 12 pastry tip to cut a hole in the middle. Place donuts on a 9x13 inch baking pan with parchment paper, cover, and proof again in a warm place until double in size (about 30 minutes). Meanwhile, heat oil to 350 Degrees. Place donuts in hot oil and fry on both sides until brown for 30 seconds. Place donuts on a wire rack with paper towels and newspaper to drain access oil. Drizzle donuts with cream cheese glaze and enjoy.
Cream Cheese Glaze
In a medium bowl, add all ingredients and whisk until well combined.
