This week’s recipe uses semolina for a lovely rich flavour and the orange syrup makes it moist and delicious. So sit back and I hope you enjoy watching…..

Ingredients:
For the cake:
120g plain flour
170g fine semolina
1 tbsp baking powder
110g butter
200g caster sugar
3 eggs
1 tsp vanilla extract
250 ml milk
Pinch of salt
For the syrup: 350 ml water 300g caster sugar 2 tsp orange extract icing sugar to dust
Method: For the Syrup:
1) Add the 300g sugar and 350ml water to a saucepan and heat almost to the boil, then simmer until the sugar has dissolved
2) Add the 2 tsp orange extract and cool the syrup
For the Cake:
1) Preheat oven Gas 4/ 180’ C
2) Butter and paper your 9 inch, loose bottom cake tin
3) Pop 120g flour, 170g fine semolina and 1 tbsp baking powder into your mixing bowl
4) Cream the 110g butter and 200g sugar until light and creamy add 1 tsp vanilla extract
5) Mix in the 3 egg yolks 1 by one
6) Sieve the flour and semolina mix, then 250ml milk into the mixture a little at a time ( a little flour, a little milk, a little flour…….)
7) In a clean bowl whisk the 3 egg whites
8) Fold these gently into the batter
9) Pour into the cake tin and level out a little
10) Bake for 45 mins until cooked through and golden in colour
11) Pour the cooled syrup gently onto the warm cake and cool completely in the cake tin
12) Sift icing sugar on top when cool
