Kaleji Paratha can keep you full for a very longer time and can be enjoyed during any meal of the day. And, vegeterians can try the same with paneer in place of Kaleji.
Chicken Liver (Kaleji) paratha recipe, ingredients and special cooking tips are provided below:
Ingredients:
300 gms chicken kaleji (liver)
1/2 tbsp green chilli paste
1 tbsp garlic paste
1/2 tbsp ginger paste
1 tbsp coriander powder
1 tbsp garam masala
1 pinch kasoori methi (dry)
1 tbsp salt
1/2 tbsp turmeric powder
1 tbsp red chilli powder
2 tbsp onion powder
1 small tomato (chopped)
Maida
Oil
Butter
Coriander leaves for garnishing
Method:
Preparation of Kaleji stuffing:
Heat oil in cooker
Add green chilli chopped/crushed
Add garlic paste/chopped/crushed
Add ginger paste/chopped/crushed
Add chopped tomato
Saute for 1-2 mintues
Now add coriander powder, garam masala, kasoori methi, onion powder, red chilli powder, turmeric powder, salt
Mix well
Add little water
Saute
Now add kaleji and mix
Close the lid of cooker
Wait until 2 whistles
Kaleji stuffing is ready
Garnish with coriander and set aside

Preparation of Paratha:
Add maida and 2 tbsp oil in a bowl
Add water as required
Make a dough
Make 2 rotis using a rolling pin
Spread kaleji stuffing on one roti evenly
Now put another roti over it and seal the borders
Heat a scoop of butter in a frying pan
Shallow fry the paratha from both sides
Add little butter
Spread 1tsp oil on each side of paratha
Shallow fry till it turns golden brown
Serve hot with chutney or tomato sauce
Special Tips:
You can replace onion powder (if not available) with finely chopped onions
Vegetarians can replace kaleji with paneer
