Puto Sulot (Coconut Puff Puff)
1.5 cups self-rising flour
2 tbsp dry instant yeast
1/4 cup granulated sugar
1 cup unsweetened coconut flakes
Salt
Additional flour for kneading
Oil for frying
Powdered sugar
1. In a small bowl, proof the yeast by mixing 2 tbsps each of yeast, sugar, and flour. Stir in warm water and wait 5-7 minutes.
2. Sift remaining self-rising flour in a mixer bowl. Add salt and proofed yeast. Mix with the hook attachment until a dough forms. Slowly mix in the coconut flakes.
3. You can finish kneading the dough on the counter. Make sure the surfaces are floured.
4. Allow the dough to rise until doubled in size, covered with a towel, in a warm place.
5. Punch down the dough. Divide into golf ball sized pieces. Then shape into small footballs. Allow to rose again for another 10-12 minutes.
6. Meanwhile, heat oil in a frying pan or saucepan to 350°F. Slowly add the raw Sulot to the oil. Cook until they float to the top.
7. Drain fried Sulot on a rack with paper towels. Dust with powdered sugar.
