Stuffed Squid – Mary’sKitchenMtl
~Ingredients~
6 clean squid (medium size)
Filling:
3 large eggs
salt & pepper to taste
1/2 tsp. (1g) garlic powder
1/2 c. (8g) chopped parsley
2 c. (130g) grated Parmesan cheese
1 c. (110g) plain breadcrumbs
~Ingredients for sauce~
3 tbsp. extra virgin olive oil
1 large chopped onion
200g frozen peas
1000g ground tomatoes
salt & chili to taste
Method:
1. Wash 6 medium squid with tentacles. Set them aside.
2. Prepare the filling.
In a medium bowl, mix eggs, salt, pepper & garlic powder. Add the chopped parsley & grated Parmesan cheese. Mix. Add the plain breadcrumbs. Mix.
3. Stuff the squid. Leave half an inch near the opening. Do not overfill. If too much filling is added, the squid will break and the filling will come out. Close the stuffed squid with a toothpick. Poke a few holes with a knife to allow the steam to escape. This will also prevent the squid from bursting while cooking.
Refrigerate while you prepare the sauce.
4. Prepare the sauce.
Turn heat on to medium-high. Add olive oil in a large skillet. Add chopped onions & salt. Cook for 2 minutes, stirring frequently. Decrease heat to medium.
Stir in the peas & cook for 2 minutes.
Add the sauce & decrease heat to low.
Add salt & chili to taste. Cook for 5 minutes, stirring occasionally.
5. Add in the stuffed squid.
6. Shape small balls with leftover stuffing & add them in. Using a wooden spoon, move the squid and balls around occasionally to avoid sticking.
7. Add chopped parsley & tentacles.
Cover & cook over low heat for 50 minutes, stirring occasionally.
Serve with your favourite pasta! Also delicious with rice! Enjoy!
