Benefit of Burdock Roots:
Rich in fiber, vitamins, and minerals
Promotes weight loss
Improves hair growing and prevents hair loss
Improves digestion
It fights against Diabetes, and lowers blood sugar
Ingredients and steps:
A: Braised Burdock Root (slice diagonally)
2 Lbs of Burdock Roots (Peel with peeler and slice diagonally)
3 Tbsp of oil
¼ cup of soy sauce
¼ cup of Mirin cooking wine
¼ cup of water
¼ cup of sugar
¼ cup of rice syrup
1 Tbsp of sesame oil
1 Tbsp of sesame seeds
Steps:
Cook sliced burdock roots in a pan; add oil, soy sauce, Mirin cooking wine, cup of water and sugar. Cover with lid and simmer for approximately 10 minute in medium heat. Open the lid and stir it until most of the brine is evaporated, then add rice syrup, sesame oil and cook another 5 minutes in high heat or until brine gets thicker. Sprinkle sesame seeds for garnishing.
B: Braised Burdock Root (slice into long strips)
Ingredients and steps are same as above.
This is usually for Seaweed rice roll.
For Sushi rice: Mix 2 cups of rice with sprinkle some salt, 2 teaspoons of vinegar, 1 teaspoon of sugar.
Prepare:
Sliced Pickled radish
Stir fry julienned carrots and cucumber separately for a few minutes with some salt. Add some sesame oil and sesame seeds on top for garnishing
Stir fry sliced fish cake for a few minutes with some soy sauce
Two beaten eggs with some salt, make a thin sheet on a pan, then cut into half (half round shape)
Put a seaweed sheet on a bamboo mat and spread the rice evenly, and add all other ingredients then roll it tightly, brush some sesame oil and sesame seeds on top for garnishing.
C: Burdock Root Salad (Cut Burdock roots into julienned/Strips)
Dressing:
¼ cup of sugar
¼ cup of vinegar
¼ cop of olive oil
¼ of mayonnaise
1 teaspoon of salt
1Tbsp of sesame oil
1 Tbsp of Sesame seeds
1 Tbsp of lemon juice
Steps:
Mix dressing ingredients together and set aside.
In a pot of hot water add some salt and vinegar, then add julienned Burdock roots, boil it for 10 minutes.
Rinse in cold water and drain it.
Mix with dressing and sprinkle with sesame seeds for garnishing.
