Ingredients
For the Chicken:
3 large chicken breasts halved
1 cup panko breadcrumbs
½ cup Italian breadcrumbs
½ cup parmesan cheese
2 large eggs
½ tsp salt
½ tsp pepper
½ tsp garlic powder
½ tsp onion powder
1 tsp dried oregano leaves
2 tbsp parsley
½ cup olive oil for frying
For the Sauce:
2 tbsp olive oil
1 medium onion diced
4 cloves garlic minced
15 oz tomato sauce
¼ tsp salt
¼ tsp pepper
For the Topping:
8 oz mozzarella cheese sliced
½ cup parmesan cheese shredded
2 tbsp parsley fresh, chopped
Instructions
For the Chicken:
1. In a large bowl, whisk together the eggs, salt, pepper, garlic powder, onion powder, dried oregano, and fresh parsley. Add the chicken fillets to the egg mixture, making sure each is well coated. Cover with plastic wrap and marinate for at least 1 hour.
2. Prepare the breadcrumb coating by mixing Panko breadcrumbs, Italian breadcrumbs, and Parmesan cheese in a medium bowl. Dredge each marinated chicken piece in this mixture to coat thoroughly.
3. Heat oil in a large skillet over medium-high heat until shimmering. Fry each breaded chicken breast for about 4 minutes per side, or until golden brown.
4. Preheat the oven to 420°F (215°C) and line a baking sheet with aluminum foil.
5. Arrange the fried chicken breasts on the prepared baking sheet. Top each with approximately ⅓ cup of sauce, two slices of mozzarella cheese, and about 2 tablespoons of Parmesan cheese. Sprinkle with chopped parsley.
6. Bake in the preheated oven for 15 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
7. Remove from the oven and allow to cool for a few minutes before serving.
8. Your Chicken Parmesan is ready! Serve with pasta, garlic bread, or a salad—enjoy!
For the Sauce:
1. Heat oil in a pot over medium-high heat. Add diced onion and minced garlic, cook for 2 minutes.
2. Stir in the tomato sauce, along with salt and pepper to taste. Cover and simmer for about 8 minutes, until the sauce thickens slightly. Remove from heat when done.
