Hello everyone and thanks for joining me. In this video I explain in real time how to fill a cake with fruit. Fruit fillings are tricky because they are chunkier and don't really set, making them less stable but oh so delicious. My solution is to create a buttercream dam around my layers, add my filling and level it, then cover the fruit with an extra layer of buttercream. This ensures that the filling won't escape because the buttercream will harden around the fruit, keeping everything in its place.
For extra security, you could always chill your sponge after creating the buttercream dam to make the dam nice and sturdy. This is especially useful if you pipe a tall dam to accommodate a lot of filling, or if you have a super runny filling like caramel. Lastly, before crumb coating, I place my cake in the fridge for about 10 minutes to firm everything up, ensuring that nothing will slide around once I apply my crumb coat.
