Mıhlama is a traditional Turkish dish made with cheese, cornmeal, butter, and sometimes eggs. It's typically served hot and is popular for breakfast or as a side dish. It uses special cheeses like ‘kolot’ but can also be made with any cheese that melts well and becomes stretched like string cheese.
🧀 Start by thinly slicing a cheese or make long and thin rinds with a peeler. If using string cheese pull it apart
🧈Heat 3-4 tablespoons of butter in a pan. Once the butter starts to brown and small brown specks appear, add 2-3 tablespoons of cornmeal and cook, stirring for a few minutes.
🫗Gradually stir in 1 cup of water until the mixture loosens.
🧀Let the cornmeal absorb
the water and the mixture lightly simmer. Then, add a pinch of salt and the cheese. Reduce the heat to low and wait for the cheese to melt. Once completely melted, stir until homogeneous and remove from heat. At this stage, the cheese won't stretch much and the mixture may seem too liquid, but it will thicken as it sits.
