Imagine waking up on Christmas morning to smell of something sweet freshly made in the kitchen. But it doesn’t need to be unhealthy. We’re continuing to be healthy through the holidays with pancakes in this video.
Pancakes for breakfast are a rite of passage for the holidays. At least for me, anyway. I loved pancakes growing up, but it was usually made from a box - until I discovered how to make it from scratch adding my own flavors. I’ll walk you through how to make 3 festive pancake ideas will satisfy all the holiday tastebuds, something for everyone. We’ll start by making all the batter, and I’ll show you how to cook them into the fluffiest pancakes.
Red Velvet
½ cup 1 cup mashed beets 2 large roasted beets
1 cups milk
1 large egg beaten
2 tablespoons butter melted
1 tsp vanilla extract
1 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 tbsp cocoa powder
1 tbsp sugar
¼ tsp kosher salt
butter for cooking
To roast the beets, remove the stems (make a not-so-green green smoothie with them) and wrap in aluminum foil. Cook in 350º F oven for one hour or until very soft to the touch. Once cool enough to handle, remove skin.
Process peeled and roasted beet with milk in a blender until smooth. Add in eggs, melted butter, and vanilla and process on low until well combined.
In a medium-sized bowl, thoroughly combine flour, baking powder, cocoa powder, brown sugar, and salt.
Pour in the wet ingredients and stir to combine. Do not over stir and like with any pancakes, a few small lumps are fine.
Heat griddle over low heat and grease with butter. If using heart pancake molds, use a silicon brush to grease inside edge of the mold. Cook until pancake starts to set, 5-10 minutes, then flip and allow to finish cooking, another 2-3 minutes.
Serve with a pad of butter and real maple syrup.

1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cups milk (plus up to 1/4 cup extra if needed)
1 tbsp vinegar
2 tbsps butter, melted
1 tsp pure vanilla extract
1 large egg
1 tbsp matcha
Gingerbread Pancakes Recipe:
1 cups all-purpose | plain flour
2 tbsps granulated sugar or sweetener
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cups milk (plus up to 1/4 cup extra if needed)
1 tbsp vinegar
2 tbsp butter, melted
1 teaspoons pure vanilla extract
1 large egg
½ tsp cinnamon
½ nutmeg
¼ tsp cloves
2 tsp molasses
