Every Ilonggo probably loves Roberto's. Their bihon, meatballs, lumpia and especially the ever famous SIOPAO. I never missed having their siopao each time I am home for vacation. Since I've been craving for it lately, I tried my best to prepare it as close as how I remember its taste. Of course nothing beats the original, but this recipe will definitely do, for now....
Roberto's (Iloilo) Style - SIOPAO
Filling Ingredients:
1 tbsp butter
small onion
3 cloves garlic
250 grams boiled & shredded chicken breast
250 grams pork belly - small strips or cubes
125 grams bacon (I used beef bacon fried and cut in squares)
120 grams bilbao - chinese sausage (I used longganiza hamonado, fried and sliced)
1/8 cup soy sauce
1 tbsp oyster sauce (Mama Sita's)
2 cups water
3 bay leaves
1/2 tsp seasoning
1/4 tsp black pepper
3 tbsp brown sugar
slurry - mix 1 tbsp cornflour/starch with 2 tbsp water
4 hard boiled eggs - cut in halves
Dough Ingredients:
3/4 cup warm water
2 tsp dry active yeast (if you are using instant yeast, mix directly with dry ingredients; no need to ferment)
1 tbsp sugar
2 1/2 cup all purpose flour
1 tsp baking powder
2 tbsp sugar
pinch of salt
2 tbsp oil
