NEVER pay for overpriced restaurant Fried Coconut Shrimp anymore. This recipe is so easy to make you could do it in your sleep. Except for peeling the shrimp part. But once you get past that chore you’re on your way to enjoy a delicious shrimp appetizer at home and here’s how to make it.

►Ingredients:
400g (14oz.) 18- 20 Piece Shrimp
1/2 Cup All Purpose Flour
1/2 Cup Cornstarch or Potato Flour
1 Cup Shredded Coconuts (Unsweetened or Sweetened it’s all up to you)
1/2 Cup Panko Breadcrumbs
1 Large Egg
1/2 Teaspoon Salt
1/2 Teaspoon Ground White Pepper
1/2 Teaspoon Paprika (optional)
1 /2 Lime
►Dipping Sauce:
50g (1.8oz.) Pineapple Minced (Reserve a few chunks of pineapple)
1/2 Cup Water
1/3 Cup Sugar
1/3 Cup Rice Vinegar **(I forgot to mention this ingredient on video 😟 sorry)
1/4 Teaspoon Salt
1 Tbsp Garlic Minced
1 1/2 Teaspoon Dried Chili Flakes
1 Tablespoon Cornstarch + 1 Tablespoon Water (slurry)
1 Stalk Spring Onion Chopped
Small Chili Chopped
►Cooking Instructions:
Prepare dipping sauce a few days ahead for best results. In a small sauce pan add water and sugar, boil until sugar dissolves on medium heat. Then add salt, rice vinegar, minced garlic and chili flakes, lower heat and cook for several minutes.
When the liquids are at a full boil add slurry and immediately stir. The slurry will thicken up the sauce, continue cooking for another minute then add minced pineapples. Cook for another several minutes on low heat while stirring occasionally.
When sauce has cooled down cover sauce with plastic wrap and keep in refrigerator for a day or two.
Devein and peel shrimp leaving on tail. On one plate combine all purpose flour, cornflour, salt, pepper and paprika, then mix well.
On another plate beat one large egg.
With another clean bowl add panko breadcrumbs and shredded coconuts and combine well.
Dip the shrimp in flour mixture first, then the egg and then into panko and coconut mixture. Then gently squeeze the shrimp to ensure a firm coating. Continue with rest of shrimp.
Heat oil to 350°F (177°C) then add shrimp and fry small batches at a time for best results. Shrimp cook fast especially frying so should take about 1 minute to 1 minute 30 seconds.
Remove and place on paper towel to drain excess oil.
Sprinkle fried shrimp with some salt and squeeze half a lime on top. Then add some chopped spring onions on top.
Add pineapple chunks and chopped chilis to dipping sauce.
It’s ready to eat!
