Udupi Style Vegetable Sambar is a classic South Indian dish made with lentils, fresh vegetables, and a freshly ground aromatic spice blend.

This sambar is slightly sweet, mildly spicy, and perfectly tangy — just like it’s served in traditional Udupi restaurants.

Ingredients:
Tur dal- 3/4th cup
Onion- 1 big
tomato- 1 medium
garlic-4 cloves
ginger-1.5 inch
curry leaves
pumpkin-1 cup
potato- 2
carrots- 1
beans- 12-15
peas-1/2 cup
mustard seeds- 1tsp
fennel seeds-1/2 tsp
cumin seeds-1 tsp
hing- 1/4th tsp
sambar masala powder- 2 tbsp
chilly powder-1 tsp
turmeric powder-1/2 tsp
coriander powder-2 tbsp
cumin powder-1 tsp
whole chilly-2
tamarind- 1 small size (put this in 1/4th cup water before u start cooking)
jaggery-2 tsp
