Morcella stuffed peppers

Morcella is a kind of black pudding, and if you cannot get it, try ordinary British black pudding. The spices are slightly different but it’s still lovely.
You need
About a dozen small sweet peppers
200 g Morcella or black pudding filling
250 g pork mince
A couple of dessert spoons (actually, as much as you like) Paprika
Salt and pepper
Some vegetable oil
A good slug of dry sherry
Open the peppers and cut a split down one side
Clean out the seeds
Place in an oven proof container and cover with a little oil and a good glut of sherry, leave for a couple of hours to soak
Mix all the other ingredients and season with salt and pepper – not too much salt as the sausage will be salty
Stuff the peppers individually and place back in the oven proof dish
Bake for about 30 minutes at 180ºC, 350ºF, Gas 4
Just as good cold the day after!
