INGREDIENTS:

CAKE LAYERS:
• 2 1/4 cups all-purpose flour
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 2/3 cup buttermilk
• 1/4 cup heavy cream
• 2 teaspoons vanilla extract
• 1 teaspoon coconut extract
• 1 1/3 cup sugar
• 1 cup unsalted butter
• 3 large eggs
• 2/3 cup shredded sweetened coconut

PINEAPPLE FILLING:
• 1 (20-oz.) can crushed pineapple
• 2/3 cup sugar
• 2 tablespoons cornstarch

FROSTING:
• 1 (8-oz.) pckg. cream cheese
• 4 tablespoons butter
• 1/4 cup sour cream
• 2 cups powdered sugar
• 1/2 teaspoon vanilla

FOR ASSEMBLY:
• 1 1/2 cup shredded sweetened coconut, toasted
• Candied pineapple for garnish
