I am going to show you 3 secrets to making the Perfect Meatballs in tomato sauce. This is a recipe everyone should know how to make and the best part is it is super easy and great to cook for people you want to impress! Just maybe not on the first date with all the slurping of the noodles :)
Making the Perfect Meatballs
Ingredients :
Meatballs
1lb or 456g Ground Beef
3/4 cup or 60 grams bread crumbs
1/2 cup or 125ml of milk
3 cloves Crushed Garlic
1/2 cup or 60g of parm
1/4 cup Parsley
1 egg
zest of one lemon
salt and pepper
Sauce
1/2 small onion
3 cloves garlic
1 tbsp crushed red chilis (optional)
1/2 cup or 125ml Red wine
1 can or 750 ml crushed tomatoes
salt & Pepper
1 tbsp thyme
1tbsp parsley
350g or 12 oz of boxed spaghetti
Recipe
All right food-dees let's start by adding 1 lb of ground beef
to the ground beef, we are going to add in 3/4 cup of bread crumbs that have been soaked in 1/2 cup of milk.
This is the first secret to making the perfect meatball
the milk-soaked bread crumbs are going to allow for a very tender meatball by helping it from drying out in the cooking process.
add in a 1/2 cup or 60g of parmesan cheese and 1/4 cup of chopped parsley
crush 3 cloves of garlic into the mixture
season with some salt and fresh cracked pepper
crack in 1 whole egg
and the zest of 1 lemon
now let's get our hands dirty and start mixing the ingredients together
we want to make sure it's well combined.
once your meat is mixed you can take a small piece and cook it to taste for seasoning as eating raw meat to taste for season is not a food-safe thing to do. once you have the seasoning you are looking for let's move on and start making our meatballs
Now for Secret 2 making a bigger ball is going to help keep the meat from overcooking during the final cooking process
using a 1/4 cup scoop or using a 1/4 cup measuring cup divide your mixture into 11 meatballs
taking one ball at a time using the palm of your hand you are going to roll it into nice little meatballs
now place a frying pan on med heat and add 2 tbsp or 30ml of olive oil
once the oil is hot add in your meatballs one at a time being careful not to overcrowd the pan as we want the meatballs to fry and brown and not boil. do this in batches if you need to
once the meatballs are cooked on one side carefully roll them to cook on the other side
once both sides are cooked let's remove them from the pan its ok that they are not cooked all the way through. that want we want
place them to the side and to our pan we are going to add in 1/2 a small onion finely diced
give that a stir then crush in 3 cloves of garlic
optionally you can add in a tbsp of red chili flakes here to give it a bit of extra spice and give you a spicy meatball
let that cook for 1-2 mins
pour in a half a cup or 125ml of red wine
make sure its a wine you like
cook the wine down for 2-3 mins
add in 1 can or 750 ml of crushed tomatoes
stir to combine
then add in 1 tbsp thyme
1tbsp parsley
fresh cracked pepper
and 1/2 tsp salt
mix it all in, place all your meatballs back into the sauce, and cover and cook on med-low for 1 hour
Cooking the meatballs on a slow heat will help tenderize and make for a more soft moist meatball
10 mins before your meatballs are done cook 350 grams or 12 oz of spaghetti noodles in a well-salted pot of water
turn off your meatballs and remove them from the sauce so we can add in our pasta
add the pasta directly from the pot and give it a good mix in the tomato sauce
add back in your meatballs
top with fresh parm and chopped parsley and enjoy
