Ribeye Reversed Seared on the Kamado Joe Big Joe

Reversed seared 2 nice ribeyes on the Big Joe, seasoned with Kinders Buttery steak seasoning.
• Started with a 2 beautiful Ribeyes, 2+ inches thick.
• Blotted the steaks with paper towels to remove any moisture.
• Seasoned the steaks for ten hours with a good coating of Kosher salt and placed in the refrigerator, uncovered.
• Seasoned them 1 hour before with Kinders Buttery steak seasoning from Costco
• Set up the Kamado Joe for direct and indirect cooking.
• Brought the temp on the KJ to 300 degrees and started the indirect cook.
• Flipped the steaks when it reached 80 degrees and when they got to 110 degrees pulled off and brought the grill up to about 500 degrees for searing.
• Seared the steaks for 1 minute each side and then repeated one time for a total of 4 minutes of searing.
Summary: This cook really turned out great! Ribeye is my favorite steak and they were a perfect medium rare!
