You will need :
2 slices of toast
(Spread butter on one side only. This will give you a nice , crusty & toasted side of the bread later.)
3 Eggs
1 tbsp milk
Salt & Pepper
1/2 Cup Chopped FRESH SPINACH
Sliced Tomatoes
1/4 cup Tex Mex Cheese (or any of your favorite Cheese available)
Butter (to grease the pan)
Cook on low medium heat and be patient with the egg mixture.
Don’t toss and turn it prematurely.
Be patient and wait for about a minute or two for the egg & spinach mixture to settle.
You can do it!
This serves 1-2 person!
