It is made using just four ingredients, ready-made shortcrust pastry, milk, eggs and cheese (salt and black pepper to taste).

Blind baking, also known as pre-baking, is a technique that involves baking a pastry shell or crust without its filling. It's used to create a flaky, crispy crust and prevent the filling from making the pastry soggy.

Use ceramic baking beans or dried beans to weigh down the pastry while it bakes. This helps the pastry keep its shape. You can reuse the beans after blind baking.

Also using a loose- bottom tin helps to take the pie out easily. I used a 23cm round tin.

Increase the amount of eggs and milk for a larger tray.
