In this video I surf fish for fluke on a NJ jetty! I was using a buck-tail with gulp to get it done today! Caught a bunch of shorts and ended up with one keeper to take home for another great recipe. I had a great day on the water, and in the kitchen! Hope you enjoy this one.
Seared Fluke over bacon mushrooms and leeks. Crispy eggplant and red pepper purée .

2 Red Bell Peppers
1 White Onion
1tsp Garlic (fresh)
3Tb Red Wine Vinegar
For the Bacon and sautéd Leek
1 Leek
1 Shallot
16oz Cremini Mushrooms
8oz Bacon
1cup Fish Stock
Fried Eggplant
1 Purple Eggplant
2cups Flour
2cups Fine Breadcrumb (seasoned)
