♡SWEET & SPICY JERK TOFU♡
In this episode of Island in 15, I’m showing you how to make my sweet and spicy jerk tofu, packed with bold Caribbean flavors. Originally, I paired it with coconut rice and sweet plantains, but this time I went for creamy mashed potatoes and sautéed asparagus—comforting sides that still let the tofu shine.✨
INGREDIENTS
🔳FOR TOFU
• 1 block extra firm tofu (16 oz) – pressed & cubed
• 1/4 tsp onion powder
• 1/4 tsp Cajun seasoning
• 1/4 tsp Garlic Salt with Parsley
• 1/4 tsp creole seasoning
• pinch of Black pepper
• 1/4 tsp Parsley flakes
• 1/3 cup grapeseed oil (or any oil of your choice)
🔳 FOR PEPPERS
• ¼ red bell pepper, julienned
• ¼ green bell pepper, julienned
• ¼ yellow bell pepper, julienned
• 1 tsp minced garlic
🔳FOR SWEET & SPICY JERK SAUCE
• 1 tsp Walkerswood Jerk Seasoning
• 2 tsp brown sugar
• 2 tbsp soy sauce
• 1–2 tbsp water
🔳 GARLIC & BUTTER ASPARAGUS
• 1 bunch fresh asparagus (about 1 lb), woody ends trimmed
• 2 tbsp unsalted butter
• 1 tsp minced garlic
• 1/4 tsp Cajun seasoning
• 1/4 tsp Creole seasoning
• Optional: squeeze of lemon juice for brightness
🔳 GARLIC MASHED POTATOES
• 2 medium russet potatoes (about 1 lb total)
• 1 tsp minced garlic
• 2–3 tbsp unsalted butter
• ¼ cup heavy whipping cream
• 2 tbsp shredded parmesan cheese
• pinch of garlic salt, to taste
• Optional: fresh parsley or chives for garnish
