"Cream"
For your "crem" you will need:
65 grams of glucose
220 grams of plain sugar
150 grams of egg whites
0.5 dl. Water.
A tsp. Vanilla. - Taste while adding your vanilla.
I quite like the combination of the sweet with the sour, so for freshness I added some lemon juice to my foam, but important all the time to taste and add a little at a time
.
You can also always share your foam also add eg licorice powder or what you like.
BOTTOM:
For your bottom, use marzipan.
I rolled my marzipan flat.
I had no extruder so I used a glass.
You can with advantage evt. Add some other bottoms if you do not like marzipan.
I baked my bottoms for approx. 5-10 min.
For another time, I think I will bake them for a few minutes to stiffen them a bit.
You can always just start by throwing a single bottom in the top also see what you thought is best before throwing them all in the top.
I think I'm mostly to the bottom with raw marzipan, where I'm going to coat the bottom with chocolate first, let them dry before I add the foam.
I added some chocolate on the bottom to keep my strawberries in the middle in place.
You can decorate them just the way you want.
I added some cobber dust and some edible flower leaves.
This is the second time I make homemade cream buns so I am far from the world champion as you can see on the crooked thorn in Pisa.
It's fun and it tastes better than the ones you buy. 😉
