Award Winning Peach Pie.
Ingredients:
For the Crust:
2 disks of pie dough (homemade or store-bought, enough for a 9-inch double crust pie)
For the Filling:
6-7 cups fresh peaches, peeled, pitted, and sliced (about 3 lbs)
½ cup granulated sugar
½ cup packed light brown sugar
4 tablespoons cornstarch (or 5 tbsp all-purpose flour)
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 tablespoon lemon juice
1 teaspoon vanilla extract
2 tablespoons unsalted butter, cut into small cubes
For the Finish:
1 large egg (beaten with 1 tbsp water for egg wash)
1 tablespoon coarse sparkling sugar (for sprinkling)
Vanilla ice cream (for serving)
Instructions:
Prep: Preheat oven to 425°F (220°C). Roll out the bottom pie crust and fit it into a 9-inch pie plate. Trim the edges.
Make Filling: In a large bowl, gently toss the sliced peaches with the lemon juice. In a small bowl, whisk together the granulated sugar, brown sugar, cornstarch, cinnamon, and nutmeg. Pour the sugar mixture over the peaches and toss gently to coat. Let sit for 10 minutes to draw out some juices.
Assemble: Spoon the peach filling into the prepared bottom crust. Discard some of the excess liquid at the bottom of the bowl if it looks too soupy. Dot the top of the peaches with the cubes of butter.
Top Crust: Roll out the second disk of dough. Place it over the filling. You can do a full top with slits cut for steam, or a lattice design. Trim the excess dough and crimp the edges to seal.
Bake: Brush the top crust with the egg wash and sprinkle generously with coarse sugar. Bake at 425°F for 15 minutes.
Reduce Heat: Lower the oven temperature to 375°F (190°C). Place a pie shield (or foil ring) over the edges of the crust to prevent burning. Bake for another 40-50 minutes, or until the crust is deep golden brown and the filling is bubbling thick juices through the vents.
Cool: This is crucial! Let the pie cool on a wire rack for at least 3-4 hours before slicing. The filling needs this time to thicken and set.
Serve: Slice and serve warm with a scoop of vanilla ice cream.
