2. The Heart of the Matter (The Stuffing)
This is where the magic happens. The traditional filling, known as Saran, usually consists of:
Khoya (Mawa): Dried evaporated milk solids that give it a fudgy, creamy texture.
Nuts & Raisins: Chopped almonds, cashews, and pistachios for crunch.
Aromatics: A heavy hit of cardamom powder and sometimes a hint of saffron or nutmeg.

Gujiyas are easily recognizable by their half-moon shape. The edges are sealed with a distinct pleated pattern—either meticulously hand-crimped or pressed with a decorative mold—to ensure the filling doesn’t escape during the deep-frying process.
