Mor Kali (Mor Koozh) மோர் கூழ் is the best traditional South Indian healthy breakfast made aditional with rice flour and buttermilk. This simple village-style recipe is cooling, nutritious, and very easy to prepare with basic ingredients available at home.
In this video, I show you step-by-step how to make soft and perfect Mor Kali without lumps using rice flour, buttermilk, and a flavorful tempering with gingelly oil, mustard seeds, dals, mor milagai, and curry leaves.
This dish is light on the stomach, perfect for hot weather, and a great traditional breakfast or evening tiffin. You can enjoy Mor Kali hot with pickle or garlic podi or let it cool, cut into slices, and serve as a snack.
INGREDIENTS:
Arisi maavu/rice flour - 1/2 cup
Butter milk - 1 cup ,Water - 2 cups
Salt as per taste
For thalipu:
Gingely oil/nalennai - 2 +1tbsp
Kadugu/mustard - 1 tsp
Ulundhu/urad dal - 1 tsp
Kadala paruppu/bengal gram - 1 tsp
Mor milagai - 3
Green chillies - 2
Some curry leaves
Asafoetida - 1/2 tsp
METHOD:
Beat curd in 2 cups of water.
In separate bowl add the rice flour and some butter milk and whisk without lumps and mix it with the rest of the butter milk & keep ready.
Keep a thick kadai add gingelly oil, add mustard to splutter with both dals.
Then add the more milaga,green chillies and some curry leaves.
Add asafoetida then add the mixed up butter milk and stir continuously till it becomes semisolid consistency keep the flame medium.
Now lower the flame and let it cook.
When done if you touch with your wet hands it will not stick that’s the consistency.
You can transfer to a greased plate when cool cut into slice & serve or serve hot as it is.
