Mac and Cheese Recipe
16 oz. elbow noodles
2 tbsp unsalted butter
2 tbsp all purpose flour
2 cups whole milk
1 tsp salt (and 1/4 tsp in water for noodles)
1 tsp pepper
2 cups American Cheese (more as desired)
1/2 cup cheddar cheese (or cheese of your choice)
Prepare elbow noodles in medium/large saucepan by bringing 8 cups of water (and a pinch of salt) to a boil. Once at a boil, add the elbow noodles and continue boiling until noodles are softened (about 8 minutes). Set noodles aside. In a large saucepan over medium heat, melt the butter. Once melted, stir in the flour and mix until it forms a paste and turns a light brown (about 30 seconds to a minute). Add one cup of milk slowly while stirring. Once the milk begins to thicken, add additional cup of water, and begin adding cheese. Adding the American cheese slowly, continue to add small amounts at a time, and stirring in. Once the cheese is melted, add more. Once the cheese is all melted, add cheddar cheese, salt, and pepper, continuing to stir. Once all cheese is melted and you have desired thickness (when cheese easily sticks to a spoon), add the elbow noodles to the cheese sauce. Serve and enjoy!
