Swordfish fish Recipe:

1-2 Pounds of Fresh swordfish, cubed
Bundle of Asparagus, diced
3 cloves of Garlic, diced
Cannellini beans
1 Lemon, Both zest and juice
1 tbsp of Red Pepper Flakes
Salt + pepper
1/4 tbsp of sugar
4 tbsp of Olive oil
1/4 cup of Mint
1/4 cup of Parsley, diced
1 tbsp of Dill, diced
Salty and pepper

Salad:
1 bulb of Fennel, diced
1 large Cucumber, diced
4 stalks of Celery, diced
1 large Apple, Fuji, diced
1/4 cup of Fresh Dill
1/4 cup of Feta Cheese
Gerards dressing, champagne


1. In a pan, add a tablespoon of olive oil and sautéed the garlic until translucent, then add your diced asparagus and cook for 3 minutes or until cooked. (*I like mine to be al dente, it keeps it crunchy. ) Pull the asparagus off the heat and add half the parsley and mint.
2. In a bowl, zest a lemon and add all of the juice from the lemon, red pepper flakes, salt, pepper, and then whisk in olive oil. *Add a little sugar if it is bitter.
3. Dress the swordfish with salt and pepper and dice into cubes.
4. In a cast iron skillet, add a little olive oil and sear each side of the swordfish.
5. Add a can of cannelloni beans to a pan and cook.
6. Once everything is cooked, add the lemon dressing to the asparagus and bring up the heat. Slowly add the swordfish to the simmering asparagus and lemon dressing.
7. To plate, Add a bed of cannelloni beans, top with the asparagus and swordfish (drizzle some of the lemon dressing from the pan on top), garnish with fresh dill and parsley.
8. In a bowl, combine all the ingredients for the side salad and dress.
9. Enjoy!
