Quick Beef Pie with Mash & Puff Pastry
This is comfort food at its finest! After all the love for my chicken pie, here’s a quick beef pie that’s hearty, cheesy, and loaded with flavour. A complete meal in one dish, topped with fluffy mash, melty cheese, and a crispy puff pastry finish. Perfect for cosy nights, family dinners, or impressing guests and yes, it’s faster than your classic pie!
Ingredients:
For the beef filling:
500g beef chuck or shin, cut into cubes
1 medium onion, chopped
3 garlic cloves, minced
1 tsp dried thyme* 2 tbsp tomato paste* 1 tsp paprika* ½ tsp black pepper* 1 tsp salt (adjust to taste)* 1 tbsp plain flour* 1 tbsp butter* 1 bay leaf* 1 tbsp Worcestershire sauce* 2 medium carrots, chopped* 1 cup beef stock* 1 tbsp cornflour mixed with 2 tbsp water (slurry)
For layering:
2 cups mashed potatoes (boil and mash potatoes then add salt, black pepper, butter, cream cheese )
1 cup grated cheese
For the topping:
1 sheet puff pastry, cut into cubes
1 egg, beaten (for egg wash)
Method:
1. Prep the beef:Cube your beef chuck or shin.
2. Cook the filling:
In an Instant Pot or pressure cooker, sauté onions until soft.* Add garlic and thyme, cook for 1 min.* Add beef cubes, sauté until browned.* Stir in tomato paste, paprika, salt, pepper, flour, butter, bay leaf, Worcestershire sauce, and chopped carrots.* Pour in beef stock and cook under pressure until beef is tender.* Stir in the cornflour slurry to thicken.
3. Assemble the pie:
Pour the beef mixture into a baking dish.
Layer mashed potatoes over the beef.
Sprinkle a generous layer of grated cheese.
Scatter puff pastry cut into cubes on top to lock in flavor and create a crispy finish.
Brush puff pastry with beaten egg.
4. Bake:
Bake at 200°C (400°F) for 20–25 minutes, or until the puff pastry is golden and crispy.
5. Serve:
Let it cool slightly, then serve warm.
