Candied Cherry Cookies

Poppycock Popcorn (from my Uncle)
16 cups popped popcorn
2 cups pecan halves (break them up a bit)
2 cups sliced almonds
1 1/3 cup white sugar
1 cup margarine or butter
1/2 cup corn syrup
1/2 tsp cream of tartar
6 large marshmallows (or 1/2 cup minis)
Microwave in a huge bowl as it will erupt like lava later
I just microwave all the margarine first until it is liquid - add sugar, corn syrup, marshmallows and cream of tartar
nuke for 2 minutes - stir stir stir - blend those marshmallows in
keep nuking and stirring every minute or so to make those marshmallows completely blend in - and keep an eye so it doesn't boil over or burn
Once everything finally blends - boil it in the microwave for another minute or two
Keep stopping to stir it so the sugar on top doesn't burn (30-60 seconds breaks )
Remove from microwave and add
1/2 tsp baking soda
1 tsp vanilla
stir stir stir while it erupts (mildly)
Pour over popcorn and nuts and stir. Cool on cookie sheets. I make mine so it is rather soft and chewy which is why I take it off the heat just before it reaches soft ball stage.
