Mustard greens (sarson): 2 bunches (~1 lb/454g), washed, hard stems removed, roughly chopped
Spinach (palak): 1 bunch (~1/2 lb/227g), washed, roughly chopped (can substitute with other greens like bathua or fenugreek leaves)
Green chili peppers: 3-4 small, stemmed and roughly chopped
Garlic cloves: 4-5, left whole
Salt: 1 1/4 tsp, or to taste
Water: 2 cups for stovetop (less for pressure cooker)
Dried fenugreek leaves (methi): 1 1/2 tbsp (optional)
For the Tarka (Tempering):
Neutral oil: 1/4 cup
Ghee or butter: 3 tbsp (or substitute more oil for vegan)
Onion: 1 small (~150-190g), finely chopped
Ginger: 2 tbsp, minced
Cilantro leaves: 2-3 tbsp, chopped, for garnish
Butter: A pat, for serving
