Описание: This video is the end result of Christmas Eve Dinner. Three cuts of Iberico pork--thick cut chops, presa and the standing prime rib roast are featured. This video is the end of a three step process on how to cook an Iberico pork dinner. We had a little duck to go with the pork and wonderfully cooked veggies--Brussels sprouts, carrots, parsnips, golden beets, and shallots. This meat fed 8 adults and two children--Claire Bear and Lily Grace. Little Ellis had a bottle. The discription of low, slow and resting is the featured technique. An explanation of the Oleic acid in the fat of the pork, which makes the fat not only delicious but healthy. This monounsaturated fat is found high content in olive oil and other oils but Iberico pork has a high concentration of this acid in the fat of the animal. The fat is snow white, creamy and soft. I cannot wait to render the leaf fat down and pressure can it for consumers who want the perfect lard for pie pastries and other cooking preferences. Note this lard is extra good to the taste and friendly with the arteries.
