We have been told that we always have to fear food poisoning from raw animal products. One wrong move and we could have a whole colony of evil salmonella swimming through our brains.

But that scare story doesn’t cohere with reality. Food poisoning cases usually happen with vegetables, and yet we don’t fear them. Nor do we fear sushi, which is raw meat. The real origin of food poisoning was not bacteria, but instead actual poison (unnatural, industrially produced toxins) that got into our food. When we realize this, we can set our worries aside and eat the diet we were supposed to.
