Blue Steel (Aogami): The Perfect Balance of Hardness and Durability
Blue Steel, or Aogami, is White Steel enriched with chromium and tungsten, creating a material that unites sharpness with durability. Chromium enhances the consistency of heat treatment, while tungsten boosts wear resistance—together ensuring blades that hold their edge longer and cut with precision.
There are two main types of Blue Steel: #2 and #1. Blue #2 strikes an ideal balance of sharpness and resilience, while Blue #1, with its higher carbon content, delivers extraordinary hardness and razor-sharp edges—though sharpening requires more skill.
More costly than Yellow and White Steel, Blue Steel is prized as one of the finest materials for professional-grade knives. For chefs, it represents both performance and tradition, embodying a steel that endures through years of use while honoring centuries of Japanese craftsmanship.
