Chole Bhature (Chickpea Curry & Flat Bread)
Chole Ingredients:
2 cup dried chickpeas (soaked overnight)
6 pieces dried amla
4 clove
8 to 10 black pepper
2 bay leaf
1/2 inch cinnamon
3 onion
3 tomatoes
1 inch ginger
1 tsp cumin seeds
1 tsp coriander powder
1 tsp garam masala
1/2 tsp turmeric
1/2 tsp red chili powder
2 tsp anardana powder
Sea Salt + Black Salt
4 tbsp oil
Fresh coriander leaves
Method:
1. Pressure cook chickpeas with 5-6 dried amlas, for 4 whistles with salt till soft.
2. In a pan, heat oil. Add cumin seeds, then onions. Sauté till golden.
3. Add ginger-garlic paste, tomatoes, and spices. Cook till oil separates.
4. Add cooked chickpeas and some water. Simmer for 10-15 mins.
5. Garnish with sliced tomatoes, julian ginger and coriander leaves
Bhature (Fried Bread)
Ingredients:
2 1/2 cups all-purpose flour
1/4 cup yogurt
1/4 tsp baking soda
Salt & sugar
Oil
Method:
1. Mix flour, yogurt, baking powder, little oil, sugar and salt. Knead into a dough with water, add little oil on top.
2. Rest for 3-4 hour or overnight
3. Make small balls, roll into circles.
4. Deep-fry in fuming hot oil, till golden and puffed.
Serve hot Chole with Bhature, with pickles, and onions! 🍴
