Ingredients for 8 mickeys:
500g flour
125 g butter
125 g of brown sugar
2 tbsp gingerbread spice
1 tbsp cinnamon
1 pinch of cardamom
½ teaspoon nutmeg
½ teaspoon salt
1 teaspoon baking soda
1 egg
2 Tbsp water
200 g of sugar beet syrup



Preparation: Working time approx. 30 minutes, rest time approx. 1 hour, cooking / baking time approx. 12 minutes


Mix the flour with the spices, salt and baking soda. Then slowly add the butter, sugar, egg, sugar beet syrup and water and continue to stir. Knead everything in briefly - only as long as necessary, otherwise the dough will become hard after baking. Divide the dough into two portions and wrap in cling film and leave to cool in the refrigerator for about an hour. After the cooling time, take one portion of dough out of the refrigerator, roll it out to a thickness of 5 mm and cut out the mickeys. Only when this portion of dough is used up, take the second portion out of the refrigerator. Bake the males on a baking sheet lined with baking paper at 180 ° top / bottom heat for about 10 - 12 minutes. After they have completely cooled, they can be decorated and decorated however you like.


Vegan alternative:
