Here is our quick and easy mediterranean style chicken and bulgur recipe! Bulgur, made from cracked wheat, is popular in the Middle Eastern and Mediterranean cuisines and it is a healthy alternative for rice as it is low GI.
Ingredients:
1/2 cup olive oil
2 medium brown onions, finely diced
1 Tbsp finely chopped garlic
1 kg diced chicken thigh fillets
1/2 tsp sweet paprika
1 tsp black pepper
2 tsps salt
1 tbsp pepper paste
1 tbsp tomato paste
2 cups coarse bulgur
2 tomatoes, peeled and diced
4 cups of boiling water
Method:
1. Heat the olive oil on high for about 1-2 minutes, then add the onions and garlic. Fry until golden (about 4-5 minutes).
2. Add the chicken and stir fry for a further 8-10 minutes.
3.Add the paprika and black pepper and continue to stir fry for a further 2-3 minutes.
4.Add the tomato and pepper pastes and stir fry for an additional 2-3 minutes.
5. Finally add the tomatoes and salt, and continue to stir fry for another 2 minutes. Lower heat completely and allow to simmer for 35-40 minutes (with the lid on).
6. Uncover and add the bulgur, stir through well and add the 4 cups of boiling water.
7. Bring the heat up slightly, stir well and then cover. Simmer for a further 10-15 minutes, or until most of the liquid is absorbed.
8. Switch off and rest for about 5-10 minutes.
9. Stir, serve and enjoy!
Serve with tzatziki and hot peppers for an authentic mediterranean experience.
