Chocolate chip cookies Gluten Free, Egg Free, soy Free

1 1/2 cups almond flour
3/4 cup oat flour
1/3 cup gluten free flour, I used Trader Joe’s
1 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
1/4 cup lite coconut milk
1/2 tsp. maple syrup
1/2 cup organic butter
3/4 cup packed brown sugar
1/2 cup sugar
2 tsp. vanilla extract
2 cups milk chocolate chips, Guittard chips are soy free


Directions:

Preheat oven 350 degree F.

In a large mixing bowl combine the almond flour, oat flour, gluten free flour, baking soda, baking powder, salt and combine.

In mixing bowl add the sugars and butter and cream until light and fluffy. Add the liquids ( vanilla, maple syrup, and coconut milk.)

Then add the dry ingredients ( flour mixture) to the mixing bowl and combine. Add the chocolate chips and mix in.

Drop dough by spoonfuls on a baking sheet lined with parchment paper and bake 10 to 13 minutes or until golden brown. Do not over cook. Cookies will be soft in the middle.

Let the cookies cool for 5 minutes on baking pan before removing them to wax paper to cool completely. Store in an airtight container.
