Recipe
Pickled Northern Pike or Other Boney Fish
STEP A
8 c. Raw Fish Fillets Skin Removed, Remove Any Large Bones, Cut Into 1-Inch or So Cubes
STEP B
Make Brine Solution
1 c. Pickling Salt
6 c. of Water
STEP C
Cover With 1 qt. of White Wine
STEP D
Prepare Pickling Solution
½ c. Brown Sugar Packed in Measuring Cup
1 ½ c. Moscato Wine, Can Use Any White Wine, Moscato Is Best
¾ c. White Vinegar
2 T. Pickling Spice
2 Banana Peppers Seeds Remove and Cut into Chunks
1 tsp. Juniper Berries, Crushed
2 tsp. Tarragon Leaves
Step E
Add Veggies
½ c Diced Red Onion
¼ c diced red pepper
Cut into cubes (Step A) Put cubes in glass dish and cover with brine solution (Step B) for 24 hours. Remove brine and rinse well with cold water. Put cubes bake in dish and cover with white vinegar: You can skip this step if you want and let veggies and pickled fish stay in pickling solution for a week or more instead of 5 days (Step C). Cover and refrigerate for 48 hours.
Drain and rinse in cold water. Put fish cubes in a large glass jar or quart canning jar, wide mouth ones work best. Make pickling solution (Step D) by bringing the pickling ingredients to a brisk boil for 3 minutes then cool to 160F or 71C. Pour cooled pickling solution over fish and veggies in jar (Step E).
Cover and refrigerate for min of 5 days best 7 days or more each day shake the jar or turn it upside down in fridge. Keep refrigerated serve with crackers, cheese, sliced green apples or dark rye bread. Serves 10-12.
