Crust Ingredients:
2 cups Almond Flour
1 Egg
2 oz Melted Butter
1 pinch Salt
1 pinch Ground Pepper
Filling Ingredients:
1 tbsp Olive Oil
2 cloves Garlic
3 cups Fresh or Frozen Spinach
4 Eggs
1 cup Heavy Cream
1 tsp Salt
½ tsp Black Pepper
4 Oz Cheese
Fresh Dill
2 pounds Salmon, cut into small pieces
Instructions:
1. Place all crust ingredients into a bowl and mix well.
2. Bake for 12-15 minutes at 350F. Set aside while preparing the filling.
3. Sauté garlic and spinach with a pinch of salt for 5 minutes.
4. Spread the spinach and salmon over the baked crust and sprinkle over the cheese.
5. Mix eggs, heavy cream, salt and pepper, mix well.
6. Pour the egg mixture over the spinach and salmon.
7. Sprinkle fresh dill.
8. Bake for 25-35 minutes at 350F.
