Kasaragode Special Ney Pathal Recipe:
Serving Quantity:
Total 20 No.of ney pathal prepared using given quantity of ingredients.
INGREDIENTS:
White rice/പച്ചരി 100 ML one cup.
Grated coconut 100 ML one cup.
Cumin seeds 1/4 Teaspoon.
shallots/ കൊച്ചുള്ളി 2 Numbers ( optional)
Salt according to taste.
water 80-100 ML
Refined sunflower oil for frying .
All purpose flour/ maida/ maize 7 Tablespoons or half cup + 1 Tablespoon ( its quantity may change according to the consistency of the rice batter preparation)
Rava/ Semolina 14 Tablespoons or one cup + 2 Tablespoon ( its quantity may change according to the consistency of the rice batter preparation)
Ratio of ingredients for dough making:
rice : coconut : maida : Rava
1 cup : 1 Cup : 1/2 Cup : 1 Cup
When you adjust the consistency try to maintain this ratio.
INSTRUCTIONS:
1. When you make rice batter, use water only require to grind it fine paste. if you use more water the quantity of maida and rava also increases accounting to it.it results more quantity of final dough.
2. ensure that all ingredients are blended well. there should be no pieces of coconut rice ( shollots or onion if your adding).
3.After making dough it should not be exposed to air for more time. it may result dryness of the dough.
4. while frying maintain medium to high flame.
5. do not fry it until it turns brown color. it may result hardness when you store it.
