Panettone. A Christmas bread that pretends it isn’t just butter, yolks, sugar, and raisins in a very expensive coat.
In this video I attempt to make it using the traditional method - lievito madre, long fermentation, butter, citrus, and a level of optimism not supported by the starter.

First refresh:
20g strong flour

Second refresh:
40g strong flour

Third refresh:
80g strong flour
80g starter
34g water
First dough:
Flour: 363 g
Pasta madre: 107 g
Water: 182 g
Sugar: 100 g
Egg yolks: 66 g
Butter: 100 g
Second dough:
Flour: 100 g
Orange juice: 40 g
Sugar: 66 g
Honey: 25 g
Salt: 7 g
Egg yolks: 66 g
Butter: 58 g
Orange zest: 1 orange
Raisins: 250 g
Almond Icing:
Egg whites: 65g
Almond flour: 75g
Sugar powder: 175g
Corn starch: 25g
