GREEN ROOF INN CRANBERY BACON GREEN BEANS
Yields: 6 Servings | Prep: 5 mins | Total: 25 mins

INGREDIENTS
• 4 slices of thick-cut bacon (Cut into small cubes or crumble
• 1 shallot, thinly sliced
• 1/2 cup dried cranberries
• 2 lb. green beans, trimmed
• 2 oz. feta cheese
• Kosher salt
• Black pepper

DIRECTIONS
1. Cut bacon into small pieces, then place in a large, cold skillet. Cook over medium-high heat until crispy, about 8-10 minutes.
2. Transfer bacon to a plate, reserving fat in skillet.
3. Reduce heat to medium.
4. Add shallot and cranberries to skillet; season with salt and pepper. Cook, stirring occasionally, until shallot is slightly softened, about 3 minutes.
5. Add green beans and 2 tablespoons water. Cook until beans are crisp-tender, about 7 minutes.
6. Transfer bean mixture to platter
7. Top with bacon pieces and feta cheese
