Who doesn't love a good poke bowl?

But to get the real deal, you need good quality raw fish for those great little cubes of poke goodness. And we don't all have access to high quality fish all the time.

So I've made a version of a homemade poke bowl with gently poached shrimp. Shrimp and prawns are always available in the freezer section of most grocery stores, and when they're gently cooked and tossed with all the poke stuff, it's really freaking delicious. What a perfect light, healthy dinner for any night of the week.

Poke bowls are especially good for easy entertaining. Set up a Poke Bar with all your favourite poke toppings, and let your guests build their own custom poke bowls.
Poke is one of the best healthy recipes for dinner because it's light and you can load it up with fresh veggies. In this version I'm showing you how to cook shrimp so they are super tender every time. I'm all about easy recipes, and this is definitely one of the easiest poke recipes there is!
