Thai Peanut Sauce or “Satay Sauce” in Thai is a traditional accompaniment to Thai chicken satay. In fact, it is good with everything! It can be used as dipping sauce or salad dressing.
Even though this recipe is adapted from traditional Thai Peanut Sauce recipe to be keto-friendly recipes, we do not use peanut butter because we want it to be the same flavor and taste of real Thai recipes.
In this recipe we use both red curry paste and panang curry paste. The red curry paste gives the spiciness while panang curry paste gives the aromatic of cumin seeds and coriander seeds. If you don’t want spiciness at all, you can drop red curry paste and use panang curry paste instead. You can also use massaman curry paste which will give slightly different taste and flavor.

✅INGREDIENTS
5g red curry paste
25g panang curry paste
250ml coconut milk
45g roasted peanuts, finely crushed
14g Erythritol
1/2 tbsp lime juice
2 tbsp olive oil
Optional: salt to taste
✅INSTRUCTIONS
• Roast peanuts over low heat until golden brown and cooked completely. Cooldown. Pulse 4-5 seconds until fine crumbs. Set aside.
• Heat the olive oil in a pan or saucepan over medium-low heat.
• Add red curry paste and panang curry paste. Sauté and stir constantly over medium-low heat for 2 minutes until aromatic.
• Pour coconut milk to the pan and stir until combined. Keep stirring for 1-2 minutes.
• Add the peanuts and stir to mix with the curry well.
• Add erythritol and lime juice. Taste and adjust the seasonings to your liking. Simmer until the curry is thicker and creamier.
• If the curry is too thick, add a little water until curry has reached the desired consistency. Let it boil.
• Stir briefly and turn off the heat.
• Transfer to a dipping bowl. Serve with chicken satay or use as dipping sauce.
