Queijo São Jorge
The São Jorge Cheese is produced by Lactaçores – “Union of Dairy Cooperatives of the Azores” and is distinguished with the "Best of the Best" award in the 4th National Contest of Traditional Portuguese Cheeses, held at the National Center of Exhibitions, whose jury evaluated 46 blind samples in representation of various regions of Portugal.
All the Azores cheeses I tasted (and tasted dozens) are good. But the best cheese is always made from raw milk, both in the Azores and in the rest of the world. São Jorge cheese only carries raw milk, rennet and salt.
To fix the aging, it is coated by a wax that seals the cheese, preventing the fermentation from continuing. So if you love cheese, and if you are on the Island of Saint Jorge, stop by the factory and try their delicious cheese!
