How to make chicken and spinach pie at home

Ingredients for 4 decent potions:
1kg Chicken Thighs
150gr Baby Spinach
250gr puff pastry
1 white onion
3 cloves garlic
200ml double cream/heavy cream
100ml white wine
2tbsp flour
a sprig of thyme
1/2tbsp salt
1/4tsp black pepper
1tsp wholegrain mustard
1 free-range egg (egg-wash)

✔Bear in mind that the spinach has quite a lot of liquid that will be released after being wilted, so if you mix looks a bit too dry before adding the spinach is nothing to really worry about.
