Описание: This is Part One of the bacon curing and smoking process. It's so simple to do, and very inexpensive compared to buying packaged industrial bacon. Commercial bacon is injected with smoke flavoured water, but this process yields nothing but old time artisanal porky goodness, free of additives and artificial enhancers. Once you try it, you'll never go back! We do all our smoking in a Little Chief smoker, using hickory and fruit wood chips.
